The beet is a cool-season root crop that yields two harvests from one plant: the swollen storage root below the soil and the leafy tops above it. It sits in the same family as chard and spinach and shares their betalain pigment, the compound that stains a cutting board red. Its appeal is that it is easy, fast, and dependable, ready to lift in well under three months.

What sets the beet apart is its dual yield. The outer leaves come off as a kitchen green while the root keeps sizing up, and the root itself lifts once it reaches eating diameter. The plant performs best in cool conditions, which is why it slots cleanly into a spring sowing and a second autumn one.

Success with beets rests on two practices that work through the same mechanism: giving each root room.
