Celeriac is a completely different plant from celery.
Both are the same species, Apium graveolens, selected for different uses. Celeriac is the root-grown variety rapaceum, whereas the stalk celery on most kitchen counters is variety dulce, which makes them close relatives rather than separate plants.
The knobby edible part is a true root.
The edible knob is largely an enlarged hypocotyl and stem base rather than a single taproot. The plant's real fibrous roots are the stringy strands hanging from its underside.
